I've just started using Adonis and am slowly working through the tutorials. My question, as I'm working for excavation underground where shear stiffness specifically is normal stress-dependent, does Adonis have the option to implement shear stiffness as a function of normal stress?

not explicitly, but you will be able to implement whatever correlation you want via scripting.
